Dr. Yimin Chen is an Assistant Professor of Nutrition and a Human Milk researcher at the University of Idaho. She practiced as a nutrition support dietitian for 15 years with the last half spent primarily in the neonatal intensive care unit at Rush University Medical Center in Chicago. Dr. Chen received her PhD from the University of Illinois at Chicago in Kinesiology and Nutrition and completed her postdoctoral training using the neonatal piglet model to investigate gastrointestinal and immunological effects of parenteral nutrition and butyrate. In her current research lab, Dr. Chen uses different cell culture models and the neonatal piglet model to complement human studies to investigate the mechanisms behind how human milk feedings exert benefit to the recipient infants. She is a firm believer in team science because she feels we can accomplish a lot more when we combine multiple people from different disciplines.
