Sarah Peterson PhD, RD, LDN

Sarah Peterson is an assistant professor in the College of Health Science at Rush University Medical Center. She complete her undergraduate degree at the College of St. Scholastica (in Duluth, Minnesota), her PhD at the University of Illinois at Chicago, and dietetic internship at Rush University Medical Center. During her time as a clinical dietitian she spent over 10 years in the Medical Intensive Care Unit at Rush; in addition to her current academic appointment she continues to serve as the RDN for the adult Cystic Fibrosis team at Rush. Her research interests include examining outcomes associated with nutrition support exposure among hospitalized patients and utilizing indicators of nutrition assessment to identify body composition.
